I made these last week, and it reminded me what a funk my cooking has gotten into...guess my scrapbooking is not the only thing in a funk lately...anyway, I was also reminded of a recipe exchange that I did about a decade ago...{geez, have I really been preparing meals that long?} Anyway, this was one of the great recipes that I acquired through that exchange and it has such a great flavor. I encourage you to spice up your dinner this week and try something new:Ingredients:
- 1/4 cup veg. oil
- 1/3 cup honey
- 1/3 cup soy sauce
- 1/3 cup bourbon or any cheap whiskey{essential ingredient}
- 2 cloves garlic pressed
- 2 pounds boneless ckinless chicken breasts , cut in 1" pieces
- 2 whole lemons, cut in wedges then cut wedges in half
- 24 medium mushrooms whole
- 2 green bell peppers cut in 2" pieces
- 1 red bell pepper cut in 2 inch pieces
- 1/4 tsp. ground pepper
- 1 yellow or sweet onion cut in 1" pieces
- kebab skewers soaked in water for 30 minutes (to keep them from burning when you grill)

In a large bowl, combine oil, honey, soy sauce, bourbon, garlic and ground pepper. Whisk to blend. Add chicken and remaining ingredients and marinate 2 hrs. in the fridge, tossing every now and again. Soak your skewers 30 minutes to prevent burning while broiling or grilling. Drain chicken and vegetables, reserving marinade. Divide chicken and vegetables among skewers. Place kebabs on foil lined broiler pan (or grill them over med. heat for 12 to 15 min) Broil turning and brushing with marinade for 12 minutes until edges of chicken are brown, but do not overcook. Serve over rice. (I put the lemon at the top of the kebab,so when you push it all off, the lemon juice squeezes out on top of everything else).
FYI, I double the marinade and baste with the extra, because I don't like basting with marinade that raw chicken has been in. Just me. Also, I bought my whiskey at Albertsons so no one would see me going in Thrifty Liquor :) The guy stocking the booze said the cheap stuff was as good as Jim Beam, so that's what I got. It all cooks out anyway, but the flavor is fabulous. Enjoy! and comment and let me know how you liked it. ~k
